Edam, in the North Holland province of the Netherlands, is best known as the original home of the round, wax-coated cheese that carries its name. This pocket-sized historic town sits on the water, with a walkable centre thick with listed buildings and a cluster of cafés and restaurants. Its name derives from a dam built on the river IJe, where the first settlement took root.
